Burning Oil?

Yesterday I changed my oil after my oil life indicator said 21%. I had Penzoil Platinum Synthetic 5w30. I noticed I only had about 3 quarts of used oil when I had originally put in 5 quarts. I do have a bad thermostat and/or seal thats causing me to drive at 160F in freezing cold temperature. Is this why I'd burn oil? Dirty CAI filter?

Don't you check your dip stick between Oil changes? It's there for a reason .
