Tonight I was driving my 05 balt base coupe at 65MPH with the outside temperature being 33oF and coolant temperature changing between 167oF-180oF. My check engine light came on and gave P0128 code about the coolant temperature sensor. I have cleared it and drove 6 more miles and it hasnt come back. What could be the cause for this?

Bad ground. Mine does it all the time. I just delete it and move on. Its a bitch to start when the code is on though, I'd suggest pulling your fan relays prior to attempting to start when you don't have access to a code reader

Chances are if you've never changed the thermostat that the rubber seal that runs around the opening has started to deteriorate to the point that coolant flows by and the thermostat can't bring or keep your engine at proper operating temperature which should be around 193°F.

I wish there was a clear cut photo so I'm not going into this blind. It seems simple but I don't want to take things a part that don't need to be.

So I'm assuming the 10 mm socket is to remove the stat housing. Is the stat held in my something? Does it come out easy? Need to be pryed?

Yes, you can reuse the coolant. You don't need to empty it, just get levels below the thermostat.
