Hello. We are doing a motor swap on a 2010 Cobalt LT (2.2L). When we got the engine in, we noticed that there was this cable that wasn't connected to anything. I think it may go to the alternator, but I am not sure. What polarity is this cable, and where does it go to? I don't want to put it in the wrong place/short it.

A ring terminal like that on a black wire would appear to be a ground. Trace it back to where it begins and report what it is from.

You have a ring terminal from alternator output to starter then starter to fuse box + battery post.
Also on the side of the block between the starter & alt & compressor is a ring term. for ground.
